SFA food, nutrition and dietetics students learn through simulation

Trading a typical classroom for a simulated intensive care unit within Stephen F. Austin State University’s DeWitt School of Nursing, students in a medical nutrition therapy course gather around Justin Pelham, their instructor.

A high-fidelity mannequin rests on a hospital bed, with its chest rising up and down simulating a real-life patient. With tubes connected to the mannequin, Pelham, a clinical instructor in the School of Human Sciences, explains what a registered dietitian would need to know and do in this clinical setting.

For the second year in a row, Pelham has partnered with the DeWitt School of Nursing to offer food, nutrition and dietetics students the opportunity to participate in a nutrition simulation to practice concepts learned in the classroom.

“Taking students to a different setting helps them see and understand concepts in a new light,” Pelham said. “The nutrition simulation is a great way to expose students to equipment utilized in the clinical environment and provide real-world application in an ICU setting.”

During the simulation, the class discussed tube feedings, parenteral nutrition, different respiratory masks, urine output, dialysis catheters and additional intravenous fluids. Then, students were tasked with completing an independent case study regarding one of the disease states covered in class.

“Students had to apply their clinical information in order to figure out their patients’ total caloric, protein and fluid needs based on the information provided,” Pelham said. “The nutrition simulation provides practical experience for the students to think critically and quickly — similar to real-world situations during their dietetic internship.”

The medical nutrition therapy course is focused on teaching students how to conduct nutrition assessments centered on nutrition-related diagnoses, interventions and monitoring/evaluation. The students also learn about chronic conditions, such as heart disease, hypertension, strokes, diabetes, pancreatitis and metabolic stress.

Nacogdoches County agriculture award honorees named
New award category added to honorees list

The Nacogdoches County Chamber of Commerce Agribusiness Committee announced a new award addition as well as the award recipients for the 18th annual Agriculture Appreciation and Awareness Banquet presented by TFP Nutrition. For the first time, a “Tallest Pine” award recipient will be honored at the banquet on Monday, April 15 at the Nacogdoches County Exposition and Civic Center, 3805 NW Stallings Dr.

as“The economy of Nacogdoches County has deep roots in Agriculture,” said Angela Shannon, Vice President of Texas Farm Credit and co-chairman of the event planning committee. “The banquet serves to show our appreciation to all of those who work in this industry.”

The banquet begins with a mix and mingle opportunity at 5:30 p.m. At 6:30 the dinner service begins, and the program starts at 7 p.m.

Steele Wright, Director of Marketing at TFP Nutrition and co-chairman of the event planning committee, said, “We became the presenting sponsor because this opportunity builds upon our company’s commitment to acknowledge the past, present and future of our industry by recognizing the people and families in our community that play a vital role in local agriculture.”

• Young Farmer of the Year: Juston Bass (Sponsor: Austin Bank and Pilgrim’s Corporation)
• Tallest Pine: Anita Scott (Sponsor: Texas Farm Credit)
“The Tallest Pine award was created to recognize an individual who went above and beyond the call of duty to the benefit of the agricultural community,” Shannon said. “It’s a nice way to give thanks to someone who has gone the extra mile.”

swGary and Sue Atkins Agricultural Scholarship Awards will be presented to Nacogdoches County students at the banquet. Scholarship recipients include Anna Cunningham, Jade Wheeler and Carly Wright, Central Heights High School; Jake Hill, Nacogdoches High School; Matthew Lowery, Douglass High School; and Luke Spivey, Garrison High School.

Tickets are $25 for each person, or $300 for a table of eight and are available now at the Nacogdoches County Chamber, 2516 North St, and Lone Star Farm & Home Center as well as from event planning committee members. Donations increase the amount of the scholarships given to the recipients at the banquet.

SFA Gardens to host spring plant sale

Stephen F. Austin State University’s SFA Gardens will host its annual Garden Gala Day Plant Sale from 9 a.m. to 2 p.m. Saturday, April 6, at the Pineywoods Native Plant Center, located at 2900 Raguet St., in historic Nacogdoches.

The sale will feature more than 300 varieties of hard-to-find, “Texas-tough” plants, including Texas natives, edibles, heirlooms, tropicals, perennials, shrubs and trees, with an emphasis on pollinator-friendly selections, as well as exclusive SFA introductions. The featured plants are extensively trialed before being offered to the public and are produced by SFA Gardens staff members and volunteers.

This popular event benefits the SFA Mast Arboretum, PNPC, Ruby M. Mize Azalea Garden and Gayla Mize Garden, along with educational programs that are hosted monthly at the gardens. Educational programs provided at the SFA Gardens reach more than 15,000 participants annually.

Parking will be available at SFA’s Janice A. Pattillo Early Childhood Research Center, 2428 Raguet St., and visitors are encouraged to arrive early and bring a wagon to haul their plants.
